For as long as I can remember I have always loved my mom's Strawberry Shortcake. It's simple to make and satisfies the salty-sweet taste buds.
The buttery biscuits, sweet juicy strawberries with creamy whipped topping makes for an mmm..mmm good dessert.
She usually served it after Sunday dinner, when my grandma would join us. Grandma would arrive around 3 pm, and we would hear her knock on the screen door, and say “Anybody home?”
I treasured these Sunday dinners with grandma. While my mom was inside cooking, she would walk around the yard with my dad, deadheading geraniums or pulling stray weeds. I would trail behind, making dandelion bouquets for the table.
One day she took a yellow dandelion from my hands and rubbed it under my chin, and said…"now, let's see if you like butter. If you do, your chin will turn yellow", and sure enough it did!

Mom’s Strawberry Shortcake
Ingredients:
- 2 1/3 cup Original Bisquick
- 3 Tbsp. Granulated Sugar
- 3 Tbsp. Melted Butter
- 1 Package Frozen Strawberries, macerated
- 1 Package Fresh Strawberries, sliced
- 1 Container of Cool Whip Topping
Directions:
Preheat the oven to 425 degrees In a medium bowl, mix Bisquick, sugar, melted butter. Divide dough into 6 round biscuits, flatten with a spoon.
Place on an ungreased cookie sheet, flatten the tops a bit Bake for 10-12 minutes, check at 10 mins.
Thaw frozen strawberries early in the day and refrigerate or thaw berries overnight in the fridge. Add 1 or 2 Tbsp. of sugar to taste. Crush berries with masher. You can also add 1/4 C. of water to crushed berries for more liquid. Top warm biscuit with a few spoonfuls of macerated berries, fresh strawberries and Cool Whip.

How amazing! Your recipe mimics my own mother’s recipe. She said this was the easiest & most delicious recipe she had ever made. Before she made the biscuits the long way around she used to say. Then she started using Bisquick & everything changed in lots of recipes! I changed it a bit & so did mom once in awhile. I added a bit more sugar..for our sweetooth & my Dad’s! Thanks this was wonderful to see in print. Your Mom was wonderful!
